Chef Gio grew up in a Puerto Rican household in Holyoke and has worked in kitchens since high school. He’s been a chef for the Max Restaurant Group and executive chef at restaurants like Taphouse Grill and the storied Eastside Grill of Northampton. He will be part of the team opening Mamou this winter in Springfield, bringing Chef Wayne and the Big Mamou’s legendary Louisiana Creole flavors back to life.

Shrimp and Grits
Not traditional Puerto Rican, but a small bite from the upcoming restaurant Mamou, that Chef Gio and his team will be opening this fall in Springfield, MA.

Mofongo con Tocino
Green plantains mashed with crispy bacon and topped with a roasted corn cream sauce.
-MAIN-
Pernil y Arroz con Gandule
Slow-roasted spiced garlic pork shoulder served with the classic Puerto Rican yellow rice and pigeon peas. Mashed avocado and pickled onion complete the dish. This is the classic Puerto Rican entree served in restaurants, food trucks, and boricua households all over America.
-DESSERT-
Flan de Queso
If you’ve ever had flan you know what it is, if you haven’t… This classic Puerto Rican dessert is the love child of custard and cheesecake. Creamy, sweet, and topped with a caramel syrup baked right in the pan.
